Blueberry Avocado Salad

A summer salad is perfect for lunch any day. Try this sweet salad, loaded with a variety of fruits and vegetables, kidney beans, and avocado! Dress it up with some olive oil and some honey and you're set! Healthy fats like avocados and olive oil are filled with omega-3s which are important in lowering cholesterol and keeping your heart healthy!

 

Ingredients:

  • 1 cup of spinach
  • 1/4 cup of chopped strawberries
  • 1/4 cup of blueberries
  • 1/2 of sweet pepper (choose any color!)
  • 1/4 cup of chopped cucumber
  • 1/2 cup of kidney beans
  • 1/2 of an avocado
  • 2 tablespoons of olive oil
  • 1 teaspoon of honey

 

Directions:

  • Rinse all the fruits and vegetables and chop up the strawberries, peppers, and cucumbers. Peel and pit the avocado. Toss everything into a big bowl and add the olive oil and honey. Toss it up and serve!
