What You'll Need:

Bowls:

  • 4 cups baby arugula 

  • 1 cup hummus

  • 1 cup cooked quinoa

  • 1 cucumber

  • 1 cup halved cherry tomatos

  • 1/2 cup pitted Kalamata olives

  • 1/4 cup feta cheese

Dressing:

  • 2 tablespoons warm water

  • 2 tablespoons tahini

  • 1/8 teaspoon garlic powder

  • 1 tablespoon lemon juice

  • 1/4 teaspoon honey

  • salt and pepper

Directions:

  • Grab a medium mixing bowl, add all ingredients for the tahini dressing and mix well.

  • Add the arugula next and toss well.

  • Add other ingredients into a bowl and top with hummus and feta.
