What You'll Need:
Bowls:
4 cups baby arugula
1 cup hummus
1 cup cooked quinoa
1 cucumber
1 cup halved cherry tomatos
1/2 cup pitted Kalamata olives
1/4 cup feta cheese
Dressing:
2 tablespoons warm water
2 tablespoons tahini
1/8 teaspoon garlic powder
1 tablespoon lemon juice
1/4 teaspoon honey
salt and pepper
Directions:
Grab a medium mixing bowl, add all ingredients for the tahini dressing and mix well.
Add the arugula next and toss well.
Add other ingredients into a bowl and top with hummus and feta.
