Mediterranean Quinoa Hummus Bowl

What You'll Need:

Bowls:

  • 4 cups baby arugula 
  • 1 cup hummus
  • 1 cup cooked quinoa
  • 1 cucumber
  • 1 cup halved cherry tomatos
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup feta cheese

Dressing:

  • 2 tablespoons warm water
  • 2 tablespoons tahini
  • 1/8 teaspoon garlic powder
  • 1 tablespoon lemon juice
  • 1/4 teaspoon honey
  • salt and pepper

Directions:

  • Grab a medium mixing bowl, add all ingredients for the tahini dressing and mix well.
  • Add the arugula next and toss well.
  • Add other ingredients into a bowl and top with hummus and feta.

Avocado Tomato Pasta Salad with Chickpeas & Lemon Basil Vinaigrette

What You'll Need:

Pasta:

  • Any kind of pasta (preferably your all time favorite)
  • 1 (15 oz) can chickpeas, rinsed and drained
  • 2 cups cherry tomatoes, halved
  • ½ cup feta crumbles
  • ¼ red onion, thinly sliced
  • 1/2 cup pitted kalamata olives
  • 1 avocado, pitted and diced (If you want! I had chose not to use avocados because they weren't on sale that week and the recipe was still bangin'.

Dressing:

  • 1/4 cup lemon juice (1 lemon)
  • 1 garlic clove
  • 2 tablespoons olive oil
  • 1/3 cup packed basil leaves
  • ¼ teaspoon dried oregano
  • ½ teaspoon salt, plus more to taste
  • Black pepper
  • Optional: torn basil leaves for garnish
