Mediterranean Quinoa Hummus Bowl

What You'll Need:
Bowls:
- 4 cups baby arugula
- 1 cup hummus
- 1 cup cooked quinoa
- 1 cucumber
- 1 cup halved cherry tomatos
- 1/2 cup pitted Kalamata olives
- 1/4 cup feta cheese
Dressing:
- 2 tablespoons warm water
- 2 tablespoons tahini
- 1/8 teaspoon garlic powder
- 1 tablespoon lemon juice
- 1/4 teaspoon honey
- salt and pepper
Directions:
- Grab a medium mixing bowl, add all ingredients for the tahini dressing and mix well.
- Add the arugula next and toss well.
- Add other ingredients into a bowl and top with hummus and feta.
Avocado Tomato Pasta Salad with Chickpeas & Lemon Basil Vinaigrette

What You'll Need:
Pasta:
- Any kind of pasta (preferably your all time favorite)
- 1 (15 oz) can chickpeas, rinsed and drained
- 2 cups cherry tomatoes, halved
- ½ cup feta crumbles
- ¼ red onion, thinly sliced
- 1/2 cup pitted kalamata olives
- 1 avocado, pitted and diced (If you want! I had chose not to use avocados because they weren't on sale that week and the recipe was still bangin'.
Dressing:
- 1/4 cup lemon juice (1 lemon)
- 1 garlic clove
- 2 tablespoons olive oil
- 1/3 cup packed basil leaves
- ¼ teaspoon dried oregano
- ½ teaspoon salt, plus more to taste
- Black pepper
- Optional: torn basil leaves for garnish
